Ingredients:
Tart
- Butter: 1/2 cup
- Sugar: 1/2 cup
- Baking Flour: 1+1/2 cup
- Egg: 1
- Baking Powder: 1 tsp
- Raisins (optional): 1/4 cup
- Jam: 2 Tbsp
Lemon Curd
- Egg yolks: 3
- Sugar: 1/2 cup
- Butter: 2 Tbsp
- Flour: 1 Tbsp
- Water: 1/2 cup
- Lemon Juice: 1/4 tsp
- Yellow food color: 1/4 tsp
Method for Tart:
- Combine butter and sugar in a bowl.
- Mix well until it forms a smooth mixture.
- Add the egg while mixing.
- Separate 2 Tbsp flour for later use.
- In a container, mix remaining flour with baking powder.
- Now using a large stainer, slowly fold the flour into the butter/sugar/egg mixture.
- Knead the mixture with hands to form a smooth dough.
- Using a biscuit cutter, cut small sized pieces from this dough.
- Grease a muffin tray with some cooking oil and powder it with the remaining flour.
- Place the biscuits into baking tray and bake for 45 minutes at 180 degrees.
Method for Lemon Curd
- Mix all ingredients into a cooking pan.
- Place on heat.
- Keep stirring while cooking.
- Once ready, fill the lemon curd into an icing gun and pour over the baked tarts.
