Ingredients:
- 1kg boneless chicken (2 chicken breast halved)
- 1/2 teaspoons ground allspice
- 1 teaspoons salt
- 1/2 teaspoons cracked black pepper
- 5-6 cloves garlic, crushed
- 1 teaspoon finely grated lemon rind
- 1 tablespoon finely chopped fresh mint leaves
- 1/4 cup olive oil
- 1/2 cup lemon juice
Method:
- Make two deep cuts on each chicken piece
- Combine remaining ingredients in large shallow dish; add chicken, mix well.
- Cover; refrigerate 3 hour or overnight.
- Drain chicken over medium bowl; reserve marinade.
- Barbecue or grill chicken untill brown and tender
- Brush the chicken with reserved marinade occasionally while cooking.
Cook's Tip:
You can also use bone-in chicken instead of boneless chicken breast.
