Ingredients:
- 250gm Plain Flour
- 1/2 tsp Salt
- 3 tbsp Castor Sugar
- 1/2 tsp Baking Soda
- 250ml Milk
- 2 Eggs
- 50gm Butter
Method:
- Mix the flour, salt, sugar and baking powder in a large bowl.
- Beat the eggs and mix with milk.
- Melt the butter and pour with the milk mixture into the bowl containing flour.
- Whisk well so that no lumps are formed.
- Heat a flat non-stick pan on medium heat.
- Lightly brush the pan with oil or butter.
- Pour a small portion of the pancake mixture into the pan.
- Make sure its even and thin.
- Heat until it becomes slightly solid.
- Lift the pancake from one edge and see if it has turned golden.
- Slip a flat knife or spatula under the pancake and flip it over.
- Make five or six pancakes and stack them together to serve.
  
  
 
Serving Suggestions:
You can use golden or maple syrup with the pancakes. The stack can even be topped with a scoop of icecream.
Cook's Tip:
If you'd like to make thicker pancakes, pour a larger quantity of mixture into the pan and then cover from the top to help the pancake cook quickly from the top without burning the underside.
