An addictive recipe: you might find yourself hooked to this light salad all through summer .. and beyond.
Greek Salad

Ingredients


  • 1 onion

  • 1 tablespoon dried oregano

  • Black pepper

  • 1 tablespoon red wine vinegar

  • 200 ml extra virgin olive oil

  • 5 tomatoes (medium size, red)

  • 1 teaspoon caster sugar

  • Pinch of salt

  • 1 large lettuce

  • 1 radish

  • 125g pitted black olives

  • 400g feta cheese

  • Juice of half a lemon

  • Parsley Leaves (optional)

Preparation:


  1. Peel and finely slice the red onion.

  2. Sprinkle over the oregano and grind over some pepper.

  3. Pour in the vinegar and oil and toss well.

  4. Cover with clingfilm and leave for 2 hours.
  5. When you are ready to eat, finalize the rest of this salad.

  6. Cut the tomatoes into quarters, then cut each quarter (always lengthwise) again, so that you have a collection of very fine segments (rather than chunks).

  7. Sprinkle the sugar and a pinch of salt over them and leave while you get on with the rest.

  8. Wash the lettuce and tear into big pieces and put into a large, wide salad bowl.

  9. Slice the radish and add that, then the olives.

  10. Add the feta cheese, cut or crumbled into rough chunks, and toss well.

  11. Now add the tomatoes, the onion in its marinade-dressing and the lemon juice.

  12. Toss gently, but thoroughly, so as to mix everything well.

  13. Sprinkle roughly chopped parsley on top (if you prefer).
