Ingredients
- 1 onion
- 1 tablespoon dried oregano
- Black pepper
- 1 tablespoon red wine vinegar
- 200 ml extra virgin olive oil
- 5 tomatoes (medium size, red)
- 1 teaspoon caster sugar
- Pinch of salt
- 1 large lettuce
- 1 radish
- 125g pitted black olives
- 400g feta cheese
- Juice of half a lemon
- Parsley Leaves (optional)
Preparation:
- Peel and finely slice the red onion.
- Sprinkle over the oregano and grind over some pepper.
- Pour in the vinegar and oil and toss well.
- Cover with clingfilm and leave for 2 hours.
When you are ready to eat, finalize the rest of this salad.
- Cut the tomatoes into quarters, then cut each quarter (always lengthwise) again, so that you have a collection of very fine segments (rather than chunks).
- Sprinkle the sugar and a pinch of salt over them and leave while you get on with the rest.
- Wash the lettuce and tear into big pieces and put into a large, wide salad bowl.
- Slice the radish and add that, then the olives.
- Add the feta cheese, cut or crumbled into rough chunks, and toss well.
- Now add the tomatoes, the onion in its marinade-dressing and the lemon juice.
- Toss gently, but thoroughly, so as to mix everything well.
- Sprinkle roughly chopped parsley on top (if you prefer).
