A chunky and fruity salad which is just right for your taste buds.
Coconut and Chickpea Salad

Serves 6-8

Ingredient:


  • 1 green mango, sliced

  • 1 fresh green Chile, finely chopped

  • 2x14 oz cans chickpeas, rinsed and drained

  • 1/4 cup unsweetened dry grated coconut

  • 1/4 cup coarsely chopped cilantro


    • Dressing:

      • 1 clove garlic, crushed

      • 1/4 cup coconut milk

      • 1 tablespoon Thai fish sauce (optional)

      • 1 tablespoon lime juice

      • 1 teaspoon grated fresh ginger

      • 1 teaspoon sugar

      Method:


      1. Combine the mango with the Chile, chickpeas, coconut and cilantro.

      2. To make the dressing, shake the ingredients together in a screw-top jar to combine.

      3. Pour the dressing over the salad, cover and refrigerate for up to 3 hours to allow the flavors to develop.


      Note:
      If green mango is not available, use a firm, under ripe mango.
