Ingredient:
- 1 green mango, sliced
- 1 fresh green Chile, finely chopped
- 2x14 oz cans chickpeas, rinsed and drained
- 1/4 cup unsweetened dry grated coconut
- 1/4 cup coarsely chopped cilantro
Dressing:
- 1 clove garlic, crushed
- 1/4 cup coconut milk
- 1 tablespoon Thai fish sauce (optional)
- 1 tablespoon lime juice
- 1 teaspoon grated fresh ginger
- 1 teaspoon sugar
Method:
- Combine the mango with the Chile, chickpeas, coconut and cilantro.
- To make the dressing, shake the ingredients together in a screw-top jar to combine.
- Pour the dressing over the salad, cover and refrigerate for up to 3 hours to allow the flavors to develop.
Note:
If green mango is not available, use a firm, under ripe mango.
